Using Deepchill® enabled Petuna to rapidly and effectively chill its Tasmanian-grown Atlantic Salmon and process their fish pre-rigor.
Easy handling
The Deepchill® system has revolutionized Petuna’s handling process. After stunning and bleeding, 2000-4000 salmon are transferred into an ISO tank filled with 10,000L of Deepchill®. Following overnight storage in the tank upon arrival at the plant, the fish is effortlessly pumped out of the tanks and onto the receiving conveyors.
This streamlined process minimizes manual labor and simplifies the handling process.
Effective cooling
Deepchill® ensures rapid and effective cooling of salmon during its 100km transportation to the plant. Upon arrival, the fish temperature typically ranges between 2-4°C. Subsequently, the salmon undergoes superchilling in Deepchill® overnight in preparation for early morning processing.
Notably, no re-icing is required at any stage of this process, underscoring the system’s efficiency and reliability in maintaining optimal temperatures.
Pre-rigor filleting
Deepchill®’s rapid cooling and superchilling effect delay the onset of rigor mortis in salmon. As a result, Petuna can now process its salmon pre-rigor, typically after approximately 12 hours of harvest.
This achievement represents a significant milestone for Petuna and sets them apart in the salmon processing industry, allowing for enhanced quality and efficiency in their operations.
